MAKE-AHEAD BREAKFAST

1 doz. eggs               
1/2 cup milk            
1/2 tsp. salt
1/4 tsp. pepper
2 Tbs. butter
8 oz sour cream
12 slices bacon, cooked & crumbled
1 c. Cheddar cheese, shredded

     Scramble eggs, milk and seasonings in butter.  Cool slightly.  Stir in sour cream.  Put in shallow casserole dish.  Sprinkle bacon over top followed by cheese.  Cover with foil.  Refrigerate overnight.  Bake at 300 to 325 degrees, uncovered, until hot and cheese has melted.  

Yield:  8 plus servings.

Variation:  Can substitute Egg Beaters, turkey ham and yogurt for low-fat, low-cholesterol.  Can also use sausage instead of bacon.
