Cabbage Soup
This is made in your microwave

  • 2 slices bacon, chopped

  • 6 cups chopped cabbage

  • 1 medium onion, sliced and separated into rings

  • 1/4 tsp. dill weed

  • 1/4 tsp. caraway seed

  • 1/8 tsp. pepper

  • 1 1/2 tsp. salt, optional

  • 4 cup hot water, divided

   Place bacon in 3-qt. casserole; cover.  Microwave at High 3 to 5 minutes, or until bacon begins to crisp.  Stir in cabbage, onion, seasonings and 2 cups water; cover.  Microwave at High 10 minutes.  Add remaining water; cover.  Microwave at High 8 to 13 minutes, or until cabbage and onions are tender.

NOTE:  for low sodium diet omit bacon.
