Holiday Salad

I call this "Holiday Salad"  because we enjoyed this salad one Thanksgiving Day at our friend's home.  When I asked for the recipe, I received it but it did not come with a title.  It is one of the most delicious salads I have every had.  Hope you enjoy it.....Gwen 

1 1/2 cups sliced almonds 
(or any nut you choose)   she had walnuts and they were great
1/2 cup sugar
2 heads romaine, torn into bite size pieces
1 8 oz. round of brie cheese, cut into 1/2 pieces
2 pints strawberries, sliced

Poppy Seed Dressing
1/2 cup salad oil  
1/2 cup sugar  
1/3 cup apple cider vinegar  
1 1/2 tsp. poppy seeds  
1 tsp. dry mustard   
1 small onion, peeled and diced.

   Combine all in a blender and blend until smooth.  May be made ahead and stored in refrigerator.

   Combine nuts and sugar in a saucepan. Cook over medium heat for 10 minutes or until the sugar begins to melt and the nuts turn light brown, stirring constantly.  Cook for two minutes longer, stirring constantly.  Spread on a sheet of foil to cool.  When cool, break nut-candy into bite-size pieces.  These may be prepared in advance and stored in an air-tight container.

    Mix the romaine, cheese, strawberries and nuts in a salad bowl, drizzle with Poppy Seed Dressing and toss to coat.  (any strong cheese, such as bleu cheese or Imported Aged Provelone may be substituted)
